Banana Bread is a perennial favorite, isn’t it?

bananabread (1 of 1)1 1/4 cup flour, 1 tsp baking soda, 1/2 tsp salt
1 cup granulated sugar, 6 tbsp butter
4 ripe bananas, 2 large eggs, 1/3 cup buttermilk, 1/2 tsp vanilla extract

Preheat oven to 350F. Sieve flour, baking soda and salt into a bowl. In an electric mixer, whip butter and sugar until they are well blended.  Then add eggs, buttermilk and vanilla. Mix well to form a smooth batter. Now slowly incorporate the dry ingredients. Pour the batter into a buttered ~ 8×4 or 9×5 loaf pan.With the smaller pan, you might have excess batter that can be used to make muffins.

Bake until golden brown. It should take approx an hour. If you are not sure whether it is done, use a cake tester.
